Naija Bakers' Diary is BACK!! after some months being off-air, your darling programme is back to blog! This time also packed with exciting and  awesome Naija bakers ready to tell the whole world their stories. 

Today in this edition of the Naija Bakers' Diary Series, I present to you a sensational baker from the Lekki axis of Lagos Nigeria. It is so good to note that this axis is currently dishing out  so much talents in the industry.You will be seeing lots of showcase of Lekki zone on this returned segment as well as other places in the world where our Naija bakers are located I am excited to present to you this wonderful lady with gifted hands. She gave me another joy of reporting in this fresh segment because of her amazing interactions. She had so much to say and I was ever ready to listen...

Ladies and gentlemen, I present to you, Mrs. Dorcas Okobi, CEO and Creative Director of  Infusion Cakes & Cafe, Lekki, Lagos. Let's join her on this drive as she lets us into her world of cakes





May we know your name and Business name and where you are based?

My name is Mrs. Dorcas Okobi and am the CEO/creative designer For Infusion Cakes and we are based at 7B wole ariyo street, off admiralty way Lekki Phase 1, lagos.


When (the year) did you start this Cake Biz?

I started professionally in 2014, though I had been baking and decorating prior to that.


What are the things that prompted you to start up your Cake Biz as in How your love for cake decorating started?

I am naturally an artistic person but I was never given the chance to explore my talent, one day a cake show caught my attention and I immediately knew that that was the best channel to showcase my artistic side. But the more I got to know about cakes the more I fell in love, I was convinced that the only thing I had passion for was cake design and I package up my law degree and headed straight to culinary school to study cake design and technics at the international culinary center New York.

What was the first official job you remembered making as a Cake designer and how did you feel then?

The first official Job was a birthday cake (Sophia the first),I was so happy because the client really loved it... it felt really good.


Can you tell us your greatest challenges in the Cake Biz or the ups and downs you have faced as a Cake designer?

Ups- having satisfied clients, them coming back and telling others.
The satisfaction of getting paid for doing what I love.
Down: economic challenges


What's your greatest cake decorating triumph?

Lol, that's a tough question. I know I haven't done that yet.


How would you describe your decorating style?

My style is more contemporary, I get inspiration from dresses, modern structural architecture...



What favourite Cakes do you enjoy baking and decorating and also the favourite colours you love working with?

I enjoy baking chiffon cake, anytime I will choose using fondant over buttercream. And for my favorite colors I love the pastel range of colors.



What are the benefits (gains) you have reaped as a Cake designer or your greatest achievements?

It has been an avenue for me to express my artistic side and also live my dream and passion. The benefits are endless for me.

Social recognition for starts, Clients also order cakes for uplifting events like weddings and birthdays which makes you feel that you are part of that special day in their lives.

A typical day for me involves gathering ingredients and cooking utensils before putting together a recipe and placing the items in the oven for baking, decorating, sending emails, doing follow ups on order... It also involves greeting customers and taking orders. All of these tasks keep me active, and naturally I am an active person which also helps me health wise.



A lot of people shy off cakes for health reasons and avoiding sugar. Are there options for these classes of people?

Now no one expects you to eat a whole cake in one sitting, just like everything in life is to be taken in moderation that so applies to cake.

Cakes where not meant to be a meal, they a treats and you can't get bad help if you take cake the proper and right why. Now that said, there are people who do have health challenges and for those we have substitutes for them e.g sugar can be substituted for honey, milk can be substituted for natural yogurt... we also have cakes like carrot cakes, apple cake, avocado cake etc


What would you say is one of the biggest lessons you have learnt in your career as a cake designer?

Patience, we deal with different people everyday and if you do not have the patience you might end up shooting yourself in the foot.



What's your most treasured piece of cake decorating tool or kit?

I treasure my fondant and gum paste tool kit.



What’s your advice to upcoming cake designers in the Nigerian Cake Industry?

Being a cake designer is not about the money rather your passion is your driving force, the Nigerian cake industry is very competitive so you must always learn to revolve yourself, be patient, take classes to learn more skills, take good pictures of your work and with dedication you will make it.
